Summer Grillin’ Madness
I have a summer-time cooking philosophy I live by that’s worked well for me for over 2 decades: If it oinks or moos, it’s beggin’ to be GRILLED!
That’s right! Fire up the spit, slap on the meat and call it dinner! The great thing about calling the Greens at Edinburgh home is that we have gas grills in the courtyard. This means that not only can you socialize with friends and neighbors in our cozy little outside paradise, but your culinary prowess can be the envy of all those with functioning noses. It’s a beautiful thing.
I’m particularly fond of cooking ribs on the grill. The smell of the sauce glazing over the meat as it barely clings to the bone is most satisfying. Witnesses to my grilling sensations think I’m bordering on genius ~ but the fact is, this recipe I’m sharing with you for BBQ pork spare ribs is just too easy to claim an exceptional culinary IQ. They’re just pork ribs – it’s just BBQ sauce and it’s just one woman and a grill. It’s soooooo easy!
Hunt-n-gather these items:
2 -3 pounds pork spareribs
2 (18 ounce) bottles BBQ sauce (I prefer Sweet Baby Rays)
1 onion, cut into quarters
1 teaspoon salt
1/2 teaspoon ground black pepper
Here’s how you do-wacka-do:
1. Put ribs in a large pot with BBQ sauce, onion, salt and pepper. Add enough water to cover. Bring to a low, rolling boil. Cook about 40 minutes.
2. Preheat grill to high heat.
3. Lightly oil grates. Place ribs on the grill. Baste ribs while cooking with the cooking sauce from the pot. Baste and turn frequently for about 20 minutes or until nicely browned and the neighbors are jealous.
To add a nice touch to this BBQ extravaganza, toss a few ears of corn on the grill, too. If you’re trying to save calories, skip the butter and squeeze a lime on the corn just before eating for a terrific buttery flavor without the fat!
